dinner reality check

crock pot chicken & rice


what? i have to make dinner tonight? is anyone else having these thoughts after the much needed christmas break? i am missing my mom's home cooking already! but it's back to the basics for us! this is our very favorite/easy crock pot chicken & rice recipe adopted from my sister-in-law sarah. yum!


ingredients:

2-4 frozen boneless skinless chicken breasts

1 pkg. (8 oz.) cream cheese (let sit out to soften)

1 can cream of chicken soup

1 pkg. italian dressing seasoning (the dried kind in the packet)

rice


stir the cream cheese, cream of chicken, and seasoning together in the crockpot. i actually start it on low and let them sit in there for about 30 min so the cream cheese is softer to stir. (but don't forget about them like i did today!) put the frozen (because i'm lazy) chicken in and cover with the mix. cook on high 4-6 hours or until the chicken is cooked and fall-apart-tender. after the first two hours when the chicken is softer i cut it up into strips for easier eating. how easy is that!?


cook the rice in a pot (or rice cooker if you're not dumb like me and know how to use the stupid thing) and smother with chicken mixture! the italian seasoning is the secret ingredient! so yum!

  20. mines in the crock pot now, and if it tastes half as good as it smells it will be AWESOME.

    I added about 3/4 can of water to the mixture as it wasn't integrating well, even after "meling" for 45 mins on low.

  24. Made this tonight after finding it on Pinterest. It was really good. I had Italian seasoning instead of the dip mix and it was great. I thought it needed a little more sauce, so I would add 1 cup milk or sour cream next time. Very yummy - recipe will go into my own recipe box.

  28. Anyone ever made this without the cream cheese? Would I need to substitute something else for it? Husband doesn't like cream cheese, or sour cream, or anything like that. Just wondering how this would taste without that ingredient? :)

  29. I made this the other night right off of Pinterest and it was pretty good! I had to add 1 cup of water because it was starting to scorch around the edges of the crock pot. It still turned out really well! Next time, I'll follow the suggestions of adding veggies.

  32. Found this recipe on Pinterest and tried it this weekend and it was a hit. Kids AND husband ate it. This rarely if ever happens in my house. Husband even got seconds. I added a bit of half-and-half to the cream cheese/cream-of-chicken mixture, and it was awesome. I'll probably try putting some frozen veggies in next time. Also, I used 1/3-less-fat cream cheese, and it was great.

  34. This is a wonderful basic recipe!!

    I added sauteed MUSHROOMS + GARLIC and 1/2 c CHICKEN BROTH + 1/2 c MILK at the beginning. Then during last 10 minutes, I added 1/2 c frozen PEAS. I served it over pasta sprinkled with PARMESAN cheese!!

  36. This was fantastic. We had it tonight. I too added a little half and half in the beginning. I also only cooked it 4 hrs on high. I couldn't help it, it tasted so good I couldnt imagine it getting any better.

  39. Tried this tonight and it was really tasty! I should have read the other comments first ... I think it would be even better as some suggested with mushrooms and I also should have added milk or sour cream to thin out the sauce. I am gone to work longer than 6 hours so I will have to save this for days off or weekends when I can put it on later in the day. Thank you so much for this recipe, also came here from Pinterest.

  44. saw on pinterest, have made this for years though really that chicken should cook in a tbsp of butter, a tsp of garlic and 1/2 cup white wine or sherry with the ital dressing----that makes it so much better adding the cream soup and cr z towards the end.

  45. Made this today! It was fantastic! I made a few little changes:

    -I added a fresh minced garlic, pepper and 1/4c skim milk
    -Used fat free cream cheese and reduced fat soup
    -Added baby carrots the full cooking time
    -Added broccoli, peas, squash and mushrooms the last 45 min
    -I also cubed the chicken before cooking

    DELICIOUS! Even though I made it with fat free ingredients, it didn't bland the taste. It was a big hit, I'll definatly be making it again.

  47. As many others, I also found your recipe on Pinterest! I L♥VE easy recipes! I made this and doubled the recipe so I would have extra. I have one boy that would not eat the chicken.

    So, I took the leftover, cooked some eggnoodles cooked them up, added them to the leftover chicken (cut up the chicken), then sprayed 2 8x8 dishes with cooking spray, then divided the chicken into two bowls, added one small bag of frozen peas to one bowl, and one small bag of frozen broccoli to the other bowl, pour each bowl in one of the 8x8 pans, bake @ 400 for 30 minute, take out top with with cheddar cheese and frenchs crunchy fried onions and bake an additional 5 minutes....
    EVERYONE L♥VED IT AGAIN!!! EVEN THE ONE WHO WOULD NOT EAT CHICKEN!!!! HE ASKED FOR SECONDS!!

  48. My crockpot does run a little hot but I've never had a problem with food burning and scorching before. I put it on LOW and came back 45 minutes later and it was already burning around the edges! I added a cup of water and had to keep opening and stirring and turning it down to WARM just so it wouldn't burn. Had to add more water as well. The sauce tastes delicious and it smells amazing. It's still cooking...I'm sure it will taste great but definitely NOT something I can put it and leave the house and come back hours later to.

  51. In my crockpot now. Hope it is as good as everyone is making it out to be.:) I have mine in LOW and plan to cook for 6-7 hrs my chicken was thawed also so ill check it at 6 hrs.

  54. You can actually put minute rice i use brown, in the crockpot wgen you put everything else in. When you out in the soup add a can of milk or wter like the can says that is the solutions to the moisture problem. The rice will be done but dont over cook. Thanks for the recipe ive never made it with cream cheese and Italian dip mix.

  59. I made this today. My boys L-O-V-E-D it! They are super picky eaters so when my eldest (3 y.o) was LICKING his bowl clean, I knew it was a winner in our house. I will definitely have to make it again...and again...and again. My husband added Pace hot sauce to his. I hope doubling the recipe for leftovers won't take away from the flavor any.

  60. Oh and I did defrost my chicken first (so I could cut off the fat) so it cooked in 4 hours. I put it on low for the 20 mins that it took to cook the rice.

  63. cooked this, got the recipe from co worker, it was so good that my husband ate most all of it, then asked me to make it again, within the same week! it is so easy and flavorful! I cooked it for my grown kids too, they were impressed that I took so much time out to cook (I didn't tell them how easy it was til way later in the evening)....it is a great recipe!

  88. This turned out AWESOME!! It will be my new comfort food!! The whole house loved it!! We have been thinking of things we can also make with this like a pot pie because the sauce at the end is rich and full of flavor.   91. I made this tonight exactly as written. I did let the cream cheese sit in the warming-up crock pot for about 30 minutes then used a whisk to stir in soup and italian drsg mix. I have to say - DELICIOUS - but we found it a tad salty so may use half the envelope next time or low salt soup. Sauce was very thick but perfect over rice. May thin it out if I serve over noodles next time so it really coats them. thanks!

Oh girl! learn to use your rice cooker!! it is amazing, turns out perfect every time, I add seasoning with the water or chicken broth - Hey I have even added the frozen vegies and CHICKEN to the macine! THIS recipe is awesome for leaving in the crockpot while you are gone then cooing up some rice when you get home and oput together the salad. Love this!

  97. Hello all! I've made this receip for years. I've found mixing the cream cheese, cream chicken and Italian dressing together the night before is AWESOME. If the mis is too thick, I thin the mix out with chicken broth. I've used boneless thighs as well as bone in chicken. THe Hubs wants me to try this with pork chops or a pork roast. :)

  100. Total epic fail on this tonight! I have been wanting to make it for so long and finally had everything I needed. I followed the recipe and directions exactly but it had a terrible taste to it. I can only assume it had to do with the Italian seasoning packet because it didn't smell too good when I opened it. Any suggests are greatly appreciated!

  103. I've made this recipe several times--with a few differences. I used the cream cheese with chives, also put in a half a cup of white wine, and served it over angel hair pasta. Rice would be good too though---just haven't tried it.

  106. Tried this and WOWZA! Loved it! I added about 4oz of sour cream and two splashes of milk at the beginning to help get the sauce a little thinner, and at an hour to go until serving time I sauteed some mushrooms with garlic and olive oil and tossed those in there too. Served over spaghetti and it was FABULOUS! Going to try serving it over breaded egg noodles the next time I make it. Thanks a heap for the recipe!

  108. I made this the other day and took some suggestions I added a can of cheddar cheese soup, 3/4 cup of water and then for the last 2 hours i added about 1/2 bag of frozen peas and carrots. We served it over rice and it was amazing! I took the leftovers and made a chicken pie a few days later, I simply added diced potatos, the rest of the peas and carrots and 3/4 cup of chicken stock.. heated it up on the stove then put in pie crust and baked for 45 minutes! It was AWESOME!

  115. so I didn't have cream of chicken soup so I used cream of mushroom, and I had to thaw my chicken because it was not boneless. After thawing and de-boning it took about 2:30:00 till shred-able then I left it for another 30 min. Really good.

  118. I have made this twice now in the last week! I used frozen chicken breasts, the little boxes that Trader Joe's has of portobella cream of mushroom soup and some water to thin it out, and a block of reduced fat cream cheese. The first time I made it I let it go all day while at work, yesterday only about 4.5 hours (the chicken is fall apart tender if you leave it on all day!) This is delicious...for anyone that doesn't like cream cheese, it IS noticeable in this dish, and can make it very rich - I would maybe do a substitute with Neufchatel, cottage cheese, maybe some sour cream or nonfat Greek yogurt even?

  122. I made this for dinner last night (and to have for lunch today). It is delicious! The only changes I made were that I only used 3/4 of light cream cheese and I sprinkled a few dashes of Emeril Lagasse's "Essence Seasoning" that I had on hand from making gumbo. Will definitely make this recipe again.

  125. I made this for dinner earlier tonight. It was super easy and very tasty! My fiance and I almost ate the who pot! As I was shredding the chicken, I realized that this would be a great base for chicken and dumplings. I'm definitely trying that next time. After reading the reviews, I made a few alterations this time. I softened my cream cheese in the microwave for 30 seconds, didn't let it sit on low for 30 minutes, added 1 1/4 cups of water in anticipation of it being too salty, and used fresh, chicken breast tenderloin. We ate it over rice. I can't wait to make it again with some of the suggestions from previous comments.

  127. Made this last night. It was a winner with the whole family. No burning issues here. Maybe you are using a too big crock pot? I used a 4 quart one and three chicken breasts and it fit in perfectly. The only think I did not like was the way it looked. Going to add a bag of peas or some mushrooms and spinach at the end next time to add some color.

  128. I made this for dinner tonight and while I think this dish has great potential,I would make some changes. I cooked 6 pieces of boneless/skinless chicken. I used 2 cans of cream of chicken (stick to 1 can). Next time I'd used 2 packages of Italian dressing, 2 cream cheeses, a little garlic and a little salt. I'd also chop up the chicken and lay it over pasta versus rice. I would add broccoli for the veggie on the side. All in all this was a nice creamy recipe. Thanks for the share!

  130. I just made this for dinner tonight! It was delicious! I served it over egg noodles instead of rice and had peas on the side. I will be making this again soon! 4 hours on high seemed a bit too much. I did 3 hours on high and 1 hour on low. I used about 7 chicken tenderloins instead of breasts and they were mostly thawed. Thanks for the great recipe!

  136. I didn't have the packet seasoning (they are hard to come by here) so I used my tube of organic Italian herbs and a bit of the dressing. Also used thawed chicken breasts, I will just do the 4 hrs on high. Hope it turns out! Thanks for sharing :)

  137. Just put it all in the pot.. Set my timer to add chicken in about 15 min. (not frozen).It ought to be ready for hubby when he get's in about 8:30. Can't wait!

  138. Well, I got a thumbs up from my hubby tonight. My GD even ate some and liked it..she is terribly picky. After our meal, I made sure the chicken was shredded and added some baby carrots, bag of peas. Tomorrow we will have a warm bowl of chicken soup.

  141. Wow this was a hit! So creamy and delish. I doubled the recipe with 6 chicken breasts and it turned out awesome. I think it would be good over wide egg noodles as well and may try that next time, but the fact is I WILL be making this again! Thank you for sharing :-)

  146. Old housewife...brand new crockpot! It's in...4 breasts,baby carrots, wine, garlic, and pak of seasoning with half can of chicken.Low. Will add other half of soup with cream cheese in last 30 min. or so. Jack Sprat will give it thumbs up or down. Stay posted.

I came home and shredded the chicken and tasted it while boiling water for egg noodles and was in heaven!!! It tasted wonderful over the pasta! Thanks so much for a great recipe!

  156. Do NOT put frozen chicken in the slow cooker! That is a recipe for salmonella poisoning and extremely unsafe. No cook who knows anything about kitchen safety would recommend that. WOW.

  157. I made this last night and it was a big hit with my husband! I pretty much followed the recipe, but added about 3/4 cup chicken broth, about 1/2 cup plain greek yogurt, fresh mushrooms, and frozen peas and carrots. I let the cream cheese sit out to soften before throwing everything in the crockpot to warm up for about 30 mins (to make sure it was combined nicely) before adding the frozen chicken. I cooked it on low for 8 hours, then had it on warm for about 3 hours (since I was gone all day). It was done perfectly when I got home ready for dinner. It smelled great walking in to the house and tasted even better!

    Even using frozen chicken and cooking on low, it was perfectly safe, no salmonella poisoning here :)

  161. I have made this before and loved it, so I through everything in this morning, but forgot if it was supposed to be on high or low and so I looked up recipe and saw I oopsed and did a ranch packet instead of Italian! I will let you know if its good or if we have to order pizza!

  162. I made this tonight. 2 hours on high, two hours on low. I added all the ingredients except the cream cheese (waited until 30min before it was done) I also added 1/2 cup of milk and 1/2 cup of chicken broth in the beginning. Also added instant rice 30min before it was done. And added some shredded mozzarella cheese at the end. Amazing!

  165. Is this something that can be prepped ahead of time as a freezer meal? Or should it be made and then frozen and reheated somehow? I'm wanting to make this for a friend who is having a baby but won't be here when she has her c-section and I want to give it to her beforehand...
