In Canada, Dairy Queen makes Skor blizzards which I miss very much. When I found out from my sister how to make regular ice cream into a blizzard, I had to give it a try. It was so good.
-vanilla ice cream (any brand, however much you need for the amount of people you're feeding)
-Skor bars or whatever you want (broken up)
I used about 1/2 of a 1.5qt pail of ice cream with 3 Skor bars. Put it all in the bowl of a kitchen Aid and mix with paddle attachment until mixed well and ice cream is more like soft serve. That's it. Not much of a recipe I know but I had to share. If you don't have a Kitchen Aid, I see no reason why a hand mixer wouldn't work.

fresh blueberry crisp
3 cups blueberries (rinsed)
2 Tbs. lemon juice
2/3 c. packed brown sugar
1/2 c. flour
1/2 c. quick oats
1/3 c. butter softened
3/4 tsp. cinnamon
1/4 tsp. salt
Directions:
1.Sprinkle lemon juice over blueberries in an 8x8 glass pan
2. Mix the rest of the ingredients in a separate bowl. I double everything in the topping except for the cinnamon (you know me...haha). The ingredients above have NOT been doubled.
3. Crumble over blueberries
4. Bake uncovered at 375 degrees for 25-30 minutes.

put the lime in the coconut
this is pretty much the easiest thing in the world, and one of the most delicious summer {or anytime} treats. my dad found this while living in hawaii and now it's one of our favs!
Coconut Lime Ice Cream
all you do is toast a layer of coconut on a cookie sheet under the broiler in the oven until the edges turn golden. then slice a couple lime wedges. sprinkle the coconut over some quality vanilla ice cream (we just made homemade and it was amazing) and squeeze the lime juice on. i like to squeeze the lime on as i go because i always want more. sounds weird, but seriously try it. it's awesome!

Spinach Artichoke Dip
I made this for the 4th of July and it went over really well. As a matter of fact, my husband was craving it so badly, I had to make another batch and we had it for dinner tonight. It's that good! I got this recipe from the back of the Knorr's vegetable soup mix. Serve it with pita chips, wheat thins anything crunchy works.
Preheat oven to 350
I box frozen spinach, thawed and drained
1 (14.5oz) can artichoke hearts, drained and chopped
1 (8oz.) package light cream cheese, room temp
3/4 cup mayo
2 cloves garlic, finely chopped
1 package instant vegetable soup mix (Liptons or Knorr's, no difference)
1 1/2 cups shredded cheddar cheese
Cream all ingredients together in an oven safe dish, including 1 cup of cheddar cheese. Sprinkle remaining 1/2 cup over the top of the mixture. Cover with foil and bake at 350 for 35 minutes. I like to take the foil off for the last 5 minutes to make the cheese all golden and bubbly.
