cheddar and herb biscuits


ummm... we made these twice last week. that should tell you how good they are... or how obsessed i am with any kind of cheesy bread.

cheddar and herb biscuits
adapted from here (along with picture above)

Biscuits:
2 cups all-purpose flour
1 tablespoon baking powder
1/4 teaspoon garlic powder
1/2 teaspoon salt
2 tablespoons shortening
3 tablespoons butter, cold (or room temp works too)
1 cup buttermilk (i never have buttermilk so i use 1 c milk and 1 1/2 tsp vinegar... let them sit together until little bubbles appear on the top, about ten min.)
1 1/4 cups grated sharp cheddar cheese (i pretty much do 2 cups)

Buttery Topping:
3 tablespoons melted butter
1/4 teaspoon dried parsley flakes (not necessary... just pretty)
3/4 teaspoon garlic powder
pinch of salt

Preheat oven to 425 degrees. In a medium bowl, combine flour, baking powder, garlic powder and salt. Cut in shortening and butter until coarse crumbs are formed. Lightly mix in grated cheese. Mix in buttermilk just until moist (dry spots here and there are ok - the biscuits will be tough if they are overmixed). Drop the biscuits onto a greased or lined baking sheet (i use my cookie scooper). Bake for 12-14 minutes, until browned and golden. While the biscuits are baking, in a small bowl combine butter, parsley, garlic powder and salt. Right when the biscuits come out of the oven, brush the butter/herb mixture over the biscuits evenly (alternately, you can dip the top of the biscuit into the butter mixture). Serve immediately.

  2. Just made these. Delicious! I did make a couple changes since I didn't have some of the ingredients. I used mostly Parmesan cheese and a little cheddar jack I had. I also used fresh garlic instead of garlic powder. Delicious!

  8. These were awesome!! Light and fluffy with just enough garlic. The only change I made was for the butter topping I used a little garlic salt instead of garlic powder.

  10. I am in the process of making these now. I didn't have shortening so I used butter instead. I also didn't have regular flour so I am trying whole wheat flour. Fingers crossed that they turn out well...

  12. A quick & healthy variation: I substituted white flour with whole wheat flour. Used skim milk (with vinegar) instead of buttermilk. And omitted the butter topping. The recipe is awesome even without these things! I shaped the dough into baseball sized biscuits and baked for 12 minutes at the recommended 425 degrees. My hubby & I cut them open and layered the crock pot bbq chicken on top of them. Oh wow! Just delicious! Thank you so much for posting these recipes!

  29. AMAZING! My husband, my one year old, and I LOVED these! My 8 year old refused to eat them because they didn't look like store bought biscuits and had "green" things on them. He would have had to fight the rest of us for the last one anyway! I did have to add some extra buttermilk because I either stink at mixing or measuring. For someone who asked how many this recipe makes we made 11 but you could easily make 12! I've got some extra buttermilk so I know what I'm making again... :D

  30. I made these tonight and they were SCRUMPTIOUS! I used shredded mozzarella cheese instead of cheddar because it's what I had in the fridge and I used garlic salt instead of garlic powder (in the batter, I cut the table salt out completely and just used garlic salt because it was both in one! In the sauce I almost doubled the garlic that was called for, using garlic salt). To get 12 out of the batch you need to make each dough ball a little bigger than a golfball. They rise up and make nice size biscuits in the end. If you are on Weight Watchers, they are 3 points each (subbing in yogurt spread for regular butter and mozz for cheddar). Also, adding the buttery sauce on top really makes the biscuit wonderful! :)
